Terroir

Different terrains and exposures

Roberto Cipresso's idea

My professional path has been a long journey through the Italy of wine, an incessant search not for the "best" terroir of all, but for the most authentic link between a grape variety and its place of choice.

My approach has always been the same: not to impose a style, but to become the interpreter of the "dialects" of each single native variety. I have spent years "collecting" not only vines, but their souls, their purest expressions linked to a soil, an exposure, a microclimate. My job was to listen, to understand, and to accompany the grapes to the cellar with the minimum possible intervention, almost on tiptoe.

The Experience in the Chalice
In the glass, this translates into absolute authenticity. Wine stops being just a product and becomes the liquid identity of its terroir: the minerality of a volcanic soil, the freshness of a high altitude vineyard, the salty character of a coast. It's not my style you hear, it's the voice of the earth.

California

Our Pinot Noirs are born from the Californian Central Coast, an extreme terroir where the ocean shapes character and the breeze sculpts elegance.

Cold maritime

Terroir

Calcareous and sandy soils, oceanic influence, ideal temperature variations for Pinot Noir.

Roberto Cipresso's idea

Wines
Pinot Noir Chalone,
Pinot Noir Santa Cruz Mountains,
Pinot Noir Cienega Valley.

History
Our Californian bet was born from the discovery of an extreme and fascinating terroir. Vineyards located at 700 meters above sea level, directly overlooking the Pacific Ocean, whose salt breeze not only amplifies the temperature variations between day and night, but sculpts a unique and unrepeatable character.

It is a border land, where the profile of the same hill divides two worlds: one side kissed by the ocean and the other facing the desert. Planting Pinot Noir here was a courageous choice: the search for the pure value of the place, beyond fashion.

The Experience in the Chalice
This dualism translates into a silky wine of extraordinary complexity in the glass.
The ocean gives flavor, elegance and a vibrant freshness; the desert gives maturity to the fruit and spicy depth.
The result is a Pinot Noir that is not simply Californian, but is the expression of this precise border point.

History
Argentina is my second land, an experience that involved and shocked me.
Here, my journey was human and historical: I learned to follow the trees to discover the oldest vineyards and the silent stories of their founders—Venetian, Trentino, Sicilian.

It is from this profound connection that our wines are born: wines that tell stories, adventures born on the most ancient geology of the Precordillera, which is almost 150 million years old.

The Experience in the Chalice
Tasting is not just a sensorial experience, but an act of liquid archaeology. It's feeling the effort and dream of the men who planted those vineyards, it's touching the primordial geology of the Andes, it's feeling the warmth of the wonderful and formidable people who continue to make this place a constant surprise.

It is a wine that is not limited to being drunk, but involves you and shocks you, just like this land did with me. It gives you a sip of adventure, a connection with a past that still lives, vibrant, in every drop.

Pommard Premier Cru Les Arvelets

History
If I had to describe the France of wine in one word, it would be: "Chapeau". A gesture of profound respect for a land that has always seduced me with its great wines, great vines and great actors. In this universe, Burgundy is not just a place, it is the capital of the greatest terroirs in the world, a true field of miracles.

My choice fell on Pommard because he is a soul who speaks clearly. Here, the identity of the terroir does not need to be sought, but manifests itself with fullness, authority and sunny identity.
It is a Pinot Noir that I immediately found seductive, capable of giving itself from the first moment with all the definition of its area.

For a winemaker, being able to touch this land, being able to "make" wine here, is not just a technical achievement, it is the fulfillment of a dream. It's a fascinating end point that I've been privileged to reach.

The Experience in the Chalice
This wine doesn't just please, it moves. It gives you the experience of touching Pommard's resilience, of feeling the echo of time and of sharing, for an instant, the realization of a dream. This is what wine can give: not just an emotion, but a connection.

History
Wine Spain is a continent of possibilities. My exploration took me to many of its most famous areas, from the Ribera del Duero to Alicante, working with majestic grape varieties such as Tempranillo and Monastrell. They offered fascinating answers, but I felt the real discovery awaited me elsewhere.

He found his true voice in Mallorca. There, in the essence of the Mediterranean, the discovery was not just the terroir, but a human alchemy, a rare complicity of intent merged with the soul of the grapes.

Mine was a great bet: to give voice to these four consolidated but never truly explored varieties. Unlike other experiences, this was a pure discovery, the possibility of revealing a potential that had remained hidden.

The Experience in the Chalice
It is not just a taste, but the experience of feeling the most authentic essence of a Mediterranean island, captured through its most identifying grapes. It is a sip that is both a novelty and a rediscovery, a dialogue with varieties that can finally express themselves with the depth and elegance they deserve.

Uruguay

An ambitious and fun collection: several Albariño clones

Oceanic temperate
50-200m
Albariño
Canelones, Montevideo

Terroir

Red and ferrous soils

Roberto Cipresso's idea

Our philosophy is often a bet, a desire to look beyond the evidence.
While the world of wine associates Uruguay almost exclusively with Tannat, we have chosen to explore another soul of this land, betting on a different variety.

We found our terroir in a fabulous area, a valley just inland caressed by the cold breezes of the ocean.
Here, the influence of the climate gives more cold than salinity, creating ideal conditions on red and ferrous soils.
Ours is not a project on a single vineyard, but the creation of the most important collection in the world of Albariño, grown in distinct parcels, which will flow into a single label to create a new and complex expression.

Mexico

In the Valle de Guadalupe we produce innovative wines that express the unique character of the Mexican terroir.

Mediterranean
300-500m
Sangiovese
Valle de Guadalupe, Baja California

Terroir

Granitic and alluvial soils, Pacific ocean breeze, controlled irrigation.

Roberto Cipresso's idea

There are adventures that you don't seek, but that find you. I would never have thought of exploring a winemaking project in Mexico, in a border land a few kilometers from Texas, fascinating and full of paradoxes, where almost coniferous notes coexist with palm trees in a generous and severe climate.

But beyond the beauty and oenological emotions, this project was born with a second, deeper message.
It comes from a responsibility.
Finding ourselves in a small "poiblito" town that risks becoming depopulated, we understood that ours could not just be a wine project, but had to be an ethical project.
That of bringing dignity to an expanding microcivilization.

Arenas

History
My philosophy has always been to go beyond the simple glass, to explore not only terroir, but also stories. This is why my journey took us to Armenia, the cradle of viticulture, where wine is not a tradition, but the very origin of civilization.

The choice of Armenia is not random. Here, Areni is not just the name of an indigenous grape, but of a village and an archaeological site of absolute value.
It is the place where the remains of the oldest cellar in the world were found, a testimony that takes us back to the birth of the first civilizations. Making wine here means touching the roots of our history.

The Experience in the Chalice
Tasting Areni is an experience that brings us extraordinarily close to a very distant past. It is not the simple discovery of a new taste, but an exploration of the ancient.

It is a journey that allows you to experience the past in a deeply emotional way. Every sip is like touching a fragment of history, a liquid connection with the very roots of humanity, an emotion that only such a solemn place can give.
